CONSTRUCTION OF A FOOD BUSINESS

The Food Premises Code

Auburn City Council uses the Food Premises Code produced by the Australian Institute of Environmental Health (AIEH) as the industry benchmark for acceptable minimum standards of construction. This applies to the construction of new food businesses and the upgrading of existing businesses.
 
In early 2004 after an extended period of consultation with relevant stakeholders, an Australian Standard was introduced which replaces the former Code. The new Australian Standard is the AS4674-2004 Design, Construction and Fit-out of Food Premises. It should be read in conjunction with Food Safety Standard 3.2.3.
 
If you are applying for approval to construct a new food business (or a proposal to carry out significant alterations to an existing business), you will need to obtain a copy of the Australian Standard in order to incorporate the requirements into the detailed plans to be submitted to Auburn City Council.

For copyright reasons Auburn City Council is unable to provide copies of the document. The assessment of plans by Council will utilise the requirements of AS4674-2004.
 

What does the Standard cover?

The Standard is called the Design, Construction and Fit-out of Food Premises. It includes five sections: 
  • Scope and General
  • Design and construction requirements for food premises
  • Floor walls and ceilings
  • Fixtures, fittings and equipment
  • Toilet facilities

Minimum Requirements

The standard includes the minimum requirements in regard to the provision of and/or acceptable materials for the following:
  • The concept of adequate space
  • Vermin proofing and insect control devices
  • Water supply
  • Sewage and waste water disposal
  • Facilities for garbage and recyclable materials
  • Ventilation including both natural and mechanical
  • Lighting
  • Floors, walls and ceilings
  • Fixtures, fittings and equipment
  • Cleaning and sanitising requirements including hand washing facilities
  • Storage facilities for clothing/cleaning chemicals etc
  • Toilet facilities
  • Associated Australian Standards and Codes.

Does the Standard apply to temporary and mobile premises?

No. The Standard applies only to the fit out of a permanent building.
